VITAMIN C: USING NATURE'S MIRACLE FOR WELL-BEING

Albert Szent-Györgyi of Nagyrápolt had worked like a man possessed for a long time. The physician and biochemist had spent day after day, night after night in his laboratory with crystallisation experiments. Fractional crystallisation is a process for separating substances. In this process, a mixture of substances is heated in a solvent and thus dissolved. Subsequently, by cooling this solution or by slow evaporation, one substance is preferentially crystallised out. That was in 1926, Albert Szent-Györgyi of Nagyrápolt was conducting parallel research at the universities of Cambridge and Szeged in Hungary. And what the scientist crystallised out of the mixture of plant and tissue extracts (paprika and chilly) was groundbreaking: for Szent-Györgyi, as his name was shortened, isolated ascorbic acid, better known as vitamin C, for the first time!



"Szent-Györgyi only found out in 1932 that ascorbic acid was actually vitamin C, to which a high effectiveness against scurvy had already been attributed in 1912 - and received the Nobel Prize for Medicine and Chemistry for his discovery together with Walter Norman Haworth for the elucidation of the chemical structure," says Natura Vitalis founder Frank Felte (www.naturavitalis.de). Speaking of scurvy: seafarers often used to suffer from gum rot, joint inflammation, muscle atrophy and connective tissue weakness on long voyages. Many died from heart muscle weakness. Frank Felte further emphasises: "Vitamin C is also said to strengthen our immune system and reduce susceptibility to colds, rheumatism, asthma or allergies. Equally important is the significance of vitamin C for collagen formation, i.e. skin health, for the formation of connective tissue and the promotion of detoxification processes in the liver, as well as for the binding and excretion of harmful substances - the vitamin is a real marvel of nature! Vitamin C also helps the body absorb and utilise the mineral iron from plant products. Especially as a vegetarian or vegan, you should therefore also always be sufficiently supplied with vitamin C."



It is also important for Frank Felte: "Those who constantly receive too little vitamin C are admittedly more susceptible to infections. That's why it makes sense to take vitamins like vitamin C in autumn and winter to protect yourself from colds and the like. Our immune system needs it to function well and fight viruses and bacteria effectively. Even if we have already caught the flu, our body is grateful for every extra portion of vitamin C, which it needs in large quantities to fight off the infection. This can have a positive effect on the duration of the infection and we are fit again more quickly. So it is true: In autumn and winter, a permanently sufficient supply of vitamin C helps us to prevent an infection from putting us out of action for too long."



The problem is that we hardly have the opportunity to get as much vitamin C as we should from our food. This is because the vitamin C content decreases during cooking, drying or soaking, as well as during storage. And even vitamin C bombs like oranges, lemons and grapefruits only contain their high content when ripe, immediately after harvesting. And so, at least in our latitudes, they are rarely on the table.
